Golden Pheasant
Serves: 2-3 people

Ingredients:
2-3 Pheasant breasts, bone out
2 cup Flour
1 teaspoon Salt
1/2 teaspoon Pepper
Creole Seasoning to taste
Bacon Grease
1 cup White Wine
1 pinch Thyme
1/2 cup Heavy Cream
Preparation:
Roll the individual pieces of a whole bird in seasoned flour (salt, pepper & creole seasoning) and fry in bacon grease until golden brown. Then add some white wine (1 cup or so), a pinch of thyme and some Salt and pepper to taste.
Cooking:
Let this cook a half hour or so and then add about a half cup of heavy cream and cook until the sauce reaches the desired thickness.
Notes:
Very tasty.
